A few weeks ago I came across an organization called I Run 4. IR4 is a group of special needs children and adults who are unable to run and are signed up to be matched with a runner who is willing to dedicate runs to the child/adult.
This was taken from the IR4 website… “The mental and emotional encouragement for both runner and honorary runner is proving to be a whole new level of motivation and awareness. Runners are able to find a whole new sense of purpose in their running while sharing who they are running for and bringing awareness to diseases and disabilities of all types”.
I was matched with a special little boy named Aaron. He just turned 1 and has Cornelia de Lange Syndrome.
I will probably never meet little Aaron, but I have already started to develop a bond with his mother and it is such an honor to run for him.

July is national blueberry month, so here is one of my favorite recipes using the lovely blueberry.
What you’ll need –
2 1/2 cups flour
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
3/4 cup brown sugar
1/3 cup butter (softened)
1 tsp vanilla
2 ripe bananas
1 pint blueberries (2 cups)
Pre-heat oven to 375 degrees
Sift 2 1/2 cups flour, 2 tsp baking powder, 1/2 tsp salt, 1/2 tsp cinnamon and put into a large mixing bowl. Make a well with the dry mixture.
Cut 2 ripe bananas into chunks and puree in blender. Add 2 eggs, 3/4 cup soft brown sugar, 1/3 cup softened butter, 1 tsp vanilla & blend again.
Pour wet mixture into flour mixture and stir well.
Gently fold in 1 pint blueberries.
Spoon mixture into greased muffin tins. Bake 25 minutes until risen. Cool in tin for 10 min, then cool on wire rack.
Yield, approx. 14 muffins
On the morning of July 4, I raced in my very first 5K in Oklahoma City — Stars & Stripes Forever 5K. I wasn’t sure what to expect since this was my first race, so I did have a little anxiety on the way there and didn’t sleep much at all the night before.
My husband and kids came with me to cheer me on.
We arrived about 50 min before race time and I got my packet information quickly. I put my bib on, put my timing chip on my shoe and started drinking my pre-workout drink and before I knew it, it was time to head over to the starting line.
There were about 300 or so people registered for the race. The gun went off and I started running. I ran the first 3/4 mile without stopping and maintained a nice pace, then I began doing run/walk intervals.
Here is one of my race pictures.
The course was nice and flat and luckily the weather was very nice that morning. According to Garmin, it was about 68 degrees at race time. There was a nice, cool breeze on the last half of the course.
While I was racing, my husband was able to keep the kids entertained at a park right by the finish line.
I finished the race in 40:53, with a pace of 12:58. Garmin showed 3.15 miles.
I had a great time at my first 5K. I will definitely do this race again next year.

Fried chicken is the ultimate picnic food in the South, but unfortunately it is not very healthy. Here is an unfried version that will give you that crunch without having to fry the chicken in all that oil.
chicken breast (1 per person)
2 cups Cornflakes cereal
1/4 cup flour
2 egg whites, beaten
3/4 tsp Cajun seasoning (optional)
1. Pre-heat oven to 350 degrees
2. Coarsely grind Cornflakes in food processor
3. Put Cornflakes in shallow dish
4. Place flour in a separate dish (if you are using Cajun seasoning, blend this with flour)
5. Place egg in 3rd dish
6. Place chicken breast in flour, then egg, then Cornflakes
7- Cook in pre-heated oven approx. 30 min or until cooked through
Punch bowl cake is one of those desserts that you can really do whatever you like with it and it will probably taste ok in the end.
Here is the recipe I used for our dinner & Disney movie night for “A Bug’s Life”
1 box yellow cake mix (or you can use angel food cake)
4 medium bananas
1 can crushed pineapple
1 tub of cool whip (I use fat free)
1 box vanilla pudding
Milk & egg as needed for cake and pudding per directions
Prepare your cake mix as directed on package. Allow time to cool. Crumble.
Prepare pudding mix as directed.
In a punch bowl or other large bowl, layer cake crumbles, pudding, fruit, cool whip.
Top with remaining cool whip.
Chill in refrigerator.
I personally think this recipe tastes even better once all the layers have really had a chance to “mesh” with each other overnight.
I thought with it being summer time, the first dinner & Disney movie night I would share with you should be Summer related, so we will start with A Bug’s Life.
If you are unfamiliar with this movie, a brief summary taken from IMDb website — Every year, a bunch of grasshoppers come to the anthill and eat what the ants have gathered for them. The “offering”, as the ants call the ritual, is a part of their fate. One day in spring, when the offering’s preparation has just been finished, Flik, unliked inventor ant, accidentally drops the whole offered seeds into the river. The grasshoppers come and give the ants a second chance to collect food until fall. Flik sets off to find bugs that are willing to fight the grasshoppers (nobody expects him to succeed anyway) and, due to a double misinterpretation, returns with a circus crew, giving everybody new hope. When the misunderstanding finally gets cleared out, there is only little time left for a new plan, which has to work, or else.

I was going with a picnic/BBQ type of theme. We also had red and white checkered plates that I found at a local party supply store to round out the theme.
